Heating the grates:
Preheat your grill with the cast iron grates to a high temperature, ideally between 450-550°F. Ensure the grates or skillet are fully heated to achieve the desired sear and prevent sticking.
Lightly brush the hot grates or skillet with a high smoke point oil like grapeseed or avocado oil. Place the steak on the hot grates or skillet and press down with tongs to maximize contact with the surface. Sear the steak for 3-5 minutes on each side for a 1-inch thick steak, or adjust based on your desired doneness and the steak’s thickness. For thicker cuts, you may need to move the steak to a cooler zone or finish in the oven to achieve the desired internal temperature without over-searing the exterior. If desired, add butter, garlic, and herbs to the skillet during the final minutes of cooking and baste the steak for extra flavor.
